Sweet Potato Toast

1 large sweet potato

Coconut Oil

Topping of choice

1.     On a cutting board, slice the sweet potato lengthwise into long slices about 1/4-1/2 inc thick.

2.     Using a standard toaster, place “toasts” into slots. May need to toast them a few times for desired texture. May also use a toaster oven.

3.     Top with your favorite foods (eggs, nut butter, tahini, avocado, tomato)
